Tabouli

Tabouli is a Levantine salad traditionally made from bulgar, parsley, tomato, lemon juice, and olive oil.  Tabouli originated in Syria and Lebanon.  Tabouli is Arabic for "little spicy".  Here is my recipe for this healthy middle-eastern dish.


1 c. dried bulgar wheat (couscous will also work)
1 T. dried parsely
1 clove of garlic, finely chopped or 2 t. garlic powder
1/2 onion, finely chopped
1 t. honey
1 c. boiling water
1 T. lemon juice
1 T. olive oil
1 T. wheat germ
1 c. chopped grape tomatoes
1 c. chopped green bell pepper


In a metal bowl combine bulgar wheat, parsely, garlic, onion, and honey.  Add boiling water and mix to combine.


Cover bowl with a towel and refrigerate for 30 min.  The wheat should absorb all the water.



Add the olive oil, lemon juice, and wheat germ. Stir to combine.  Then add the chopped tomatoes and bell pepper.




   
Carefully, fold in the vegetables as to not mash them.  Chill for an hour.




Tabouli is traditionally served on a bed of lettuce but it can easily be used as a side for any meal.
