Sweet Potato Fries

A healthy alternative to deep fried "french fries".  Super simple to put together and very delicious.




Ingredients:
6 sweet potatoes
coarse sea salt
olive oil




Preheat oven to 425F.  Wash and scrub potatoes under warm water.  


Slice potatoes in half.






















Then cut each half into four.


 Cut each quarter into two.  (If you have larger potato quarters you might need to cut them into three or even four)  Arrange fries onto a buttered cookie sheet.




Brush fries with olive oil.
Sprinkle with the sea salt.


Slide pan into the oven.  Bake for about 25-30 min.  Stir potatoes every 5-10 min.  If you are using more than one cookie sheet, rotate cookie sheets every 5 min.  When potatoes are soft and can easily be poked though with a fork, transfer to a serving dish.     





Sprinkle with more salt if desired.     

Serves 12 people.
