Rustic Sourdough Bread

Here is my first try at making sourdough bread.  I used a sourdough starter, affectionately referred to as "Arthur", which was given to me by a friend.

Ingredients 
1 c. "fed" sourdough bread 
1 1/2 c. lukewarm water
2 t. instant yeast
1 T. sugar
2 1/2 t. salt
4 c. all-purpose flour
1 c. whole-wheat flour


Combine all ingredients, kneading to a smooth dough.
















Rise in a covered bowl until doubled. (90min) 




Divide dough in half without degassing the dough.  Shape into ovals and place on a lightly greased baking sheet.  Rise until very puffy. (1 hour)


Preheat oven to 425F.  Spray loaves with water and slash deeply on the diagonal.  Bake 25-30 min, until golden color and hollow sounding when thumped on bottom.


P.S.  Mrs. Munshower, Arthur was "fed" afterwords and is being well cared for.  :)   


     This chewy loaf with its golden crust goes great with soups and stews.       
                      Have leftovers?  It also makes great French Toast!


This is my second try at sourdough bread.  This time I did not use wheat flour but only white flour.  I think it had more of a sour flavor because there was no strong wheat flavor to dilute it.
