Frozen yogurt vs. ice cream

Many cooks wonder if they can substitute yogurt for cream in a recipe to make a frozen yogurt instead of ice cream.  Yogurt and cream have different properties.  Premium ice cream is usually made from a cooked custard base which is then cooled and frozen.  Yogurt is not cooked before using because it is susceptible to curdling when heated.  Also, yogurt must be combined with other dairy products or juices to insure a smooth, light result.  Used alone, it becomes hard and cannot be spooned easily.  

Frozen Yogurt: Frozen yogurt is made from plain, flavored, low-fat or fat-free yogurt, combined with fruit, sweeteners, milk and flavorings.  Frozen yogurt has recently become more popular.  One major reason for this is that while there's no denying its sugary, tangy goodness, it's also considered healthy, low in carbs and calories, and essentially fat free. But, don't think because you are eating frozen yogurt you can have a whole bowl full.  There is still some fat.

Chocolate Frozen Yogurt                                                              
1 c. whole milk
6 oz. semisweet chocolate, chopped
2 c. low-fat vanilla yogurt
1/4 c. sugar

Combine the milk and chocolate  in a blender
and process until smooth.  Add yogurt and sugar.
Process until smooth.  Turn ice cream machine
on and pour mixture into the ice cream maker.
Churn until thick, about 25-30 min.  

Ice Cream: Ice cream is a frozen mixture with a high butterfat content, rich with cream, milk, sweeteners and flavorings.  There are many advantages to making your own ice cream.  You can make a variety of flavors at about half the cost of those commercially produced.  Another benefit is the nutrition.  You can eliminate all of the chemical emulsifiers, stabilizers, and artificial flavors and ingredients.  Homemade ice cream only has three base ingredients: milk, cream, and sugar.  Other ingredients you could add would include chocolate, berries, or nuts depending on what flavors you are making.  This is much healthier compared to Friendly's ice cream.  Friendly's royal bananna split sundae ice cream has 30 ingredients of which the first three are milk, sugar, and corn syrup.  It also contains partially hydrogenated oil (aka trans fat) and about 15 artificial colors and preservatives.  

Chocolate Ice Cream
1 c. whole milk
1 c. sugar
8 oz. semi-sweet chocolate
2 c. heavy cream
1 t. vanilla extract

Heat milk.  In a blender combine sugar and chocolate.
Add the hot milk and blend.  Blend in the cream.  Pour
Mixture into an ice cream maker.  Let mix for 25-30 min.
