Whoopie!!!

The whoopie pie is an American baked good that may be considered either a cookie, pie, or cake. It is made of two round mound-shaped pieces of chocolate cake, or sometimes pumpkin or gingerbread cake, with a sweet, creamy filling or frosting sandwiched between them.  Both Pennsylvania and Maine claim to be the birthplace of the whoopie pie.  The largest whoopie pie ever made was baked in Portland, Maine on March 26, 2011, weighing in at 1,062 lbs.!!  
Here is my version of the classic whoopie pie.


Chocolate Whoopie Pies  
1/2 c. butter
1 c. sugar
1 t. salt
1 t. vanilla extract
2 eggs
1/2 c. cocoa powder
2 c. all purpose flour
1 t. baking powder
1/2 t. baking soda
1 c. milk


Filling
1/2 c. butter
3 c. powdered sugar
1 t. vanilla
1-2 T. milk


For the cakes:  In a large bowl, mix together the butter,sugar, salt and vanilla. 


Beat in the eggs. 


Whisk together the flour, cocoa powder, baking powder, and baking soda.  Add the mixture to the butter mixture alternately with the milk until everything is combined.


Preheat oven to 400F.  Using a small cookie scoop, drop batter onto a cookie sheet lined with parchment paper.


Bake for 10-12 min.  Remove from oven and let cool on the pan for 5 min, before moving to a cooling rack.


For the filling:  In a mixing bowl, combine softened butter and powdered sugar, sifted.


Add vanilla and milk and beat until creamy.


Transfer filling to a frosting bag.  Swirl filling onto the flat side of one cake.  Top with another cake, flat side down.  Repeat until all cakes and filling is used.
