Strawberry Shortcakes
3 1/2 c. all-purpose flour
1 T. baking powder
1/2 t. baking soda
1/4 c. dried milk
3 T. sugar
1/2 c. butter
2 t. vanilla extract
1 egg
1 c. buttermilk
2 quarts sliced strawberries
1/2 c. sugar
2 t. lemon juice
1 c. heavy whipping cream
1/4 c. sugar
1 t. vanilla extract
Whisk together the dry ingredients and the butter. In a separate bowl, combine the vanilla egg and buttermilk. (Don't have buttermilk? Add about a teaspoon of lemon juice to regular milk to get similar acidic properties to buttermilk.)
Turn the dough out onto a floured surface. Knead the dough about 4 or 5 times. Pat it out until its about a 1/2 thick. Take a circular topped glass and rub flour around the rim. This will prevent the dough from sticking to it as you cut out the biscuits. Cut the dough into circles.
Place on a ungreased cookie sheet. Bake at 425F for 10-12 min. Cool on a rack for about 15 min.
In a large container combine the strawberries, 1/2 cup sugar, and lemon juice. Let rest in refrigerator for 1 hour.
In a stand mixer with the whisk attachment, whip the heavy cream. When it becomes stiff, add the 1/4 cup of sugar and vanilla.
To assemble the shortcakes, slice a biscuit in half. Spoon on a healthy serving of strawberries and whipped cream onto the bottom half of the biscuit. Top with the top half of the biscuit. Enjoy!!
