Blueberry Pie Competition (not)

For my sister's birthday this year, she wanted a blueberry theme.  She asked each family attending her party to make a blueberry pie.  So, here is my contirbution to the blueberry pie feast!  :)
P.S.  I do believe this will be my last "berry post".  At least for a little while.

Blueberry Pie
2 1/4 c. all purpose flour
1/2 c. lard, chilled
3 t. butter, chilled
5-6 T. water

7 c. fresh blueberries
1/2 c. flour
1 t. cinnamon
3/4 c. sugar
1 T. lemon juice


In a stand mixer, combine flour, lard, and butter.  Mix until the mixture forms crumbles.

Add water until the mixture begins to hold together and forms a dough.  Wrap in plastic wrap and refigerate for 15 min.

In a large mixing bowl, combine the blueberries, flour, cinnamon, sugar, and lemon juice.  Set aside.

Divide dough in half.  Rold out one half of the dough and place into a pie plate.

Pour blueberry mixture into the prepared crust.  Roll out second half of the dough.  Place gently onto the blueberries.  Crip the edges.  Place pie on a cookie sheet and make a foil edge for the pie.  This will keep the crust edge from getting burnt.

Bake at 425F for 35-40 min.  Set on a wire rack and let cool.

Serve warm with vanilla ice cream.


Here were the pies brought for the party.  They were all delicious.  (I only know because I sampled them all.)
