Molasses Cookies

Fall is approaching and its time to start harvesting the last from the garden.  Time to put away the berry and ice cream recipes and get out those cinnamon and pumpkin ones!  Molasses cookies fill the kitchen with the homey smell of baked spices.  These chewy and crunchy cookies go perfect with a cup of coffee for a great Autumn dessert. 
This was the first time I had tried this particular recipe.  They were fantastic and I know this for fact because my brother ate 14!  (gross)  

P.S. Don't put the ice cream away totally.  I don't think I could go all those winter months without ice cream!!  :)

Molasses Cookies 
King Arthur Flour

  • 3/4 cup butter
  • 1 cup sugar
  • 1/2 teaspoon salt
  • 2 teaspoons baking soda
  • 1 large egg
  • 1/3 cup molasses
  • 2 1/3 cups Unbleached All-Purpose Flour
  • 1 to 2 teaspoons ground ginger
  • 1/2 teaspoon ground cloves
  • 1 teaspoon ground cinnamon

coating

  • 1/4 cup sugar
  • 1 teaspoon ground cinnamon
Preheat oven to 375F.  Line two baking sheet with parchment paper.  Beat together the butter, sugar, salt and baking soda.

Beat in the egg and molasses.

Add the flour and spices, beating to make a smooth, fairly stiff dough.

Combine coating ingredients in a shallow bowl.  Drop cookie dough balls using a cookie scoop into the coating. Roll in coating.

Place on the prepared baking sheets and bake for 11 min.

Move to a wire rack and let cool.
Makes about 5 dozen.
