An ice cream sandwich is a frozen confection composed of a layer of ice cream, usually vanilla (but not necessarily), "sandwiched" between two cookies or slices of cake. In Australia, these are called "giant sandwiches", in Scotland, "sliders", and in Singapore, "potongs". England used to call them "ice cream biscuits", but since the 1970's, this treat is rarely seen in the UK. And, of course we all know what they are called in America: the ice cream sandwich!
Cookie Sandwiches
1 c. butter, very soft
1 c. sugar
1 egg
1 t. vanilla extract
1 t. almond extract
2 1/4 c. flour + some for dusting
Sprinkles, optional
Vanilla ice cream
In a stand mixer, beat butter and sugar until fluffy.
Add eggs and the extracts.
Mix in the flour. Refrigerate dough for one hour.
Roll dough out onto a floured surface. Cut out circles using a wide circle cutter. Place on a cookie sheet. Sprinkle on the sprinkles. Bake at 350F for 15 min.
Cool on wire rack until completely cool. Once they are cool, it is time to prepare the yumminess!
Turn a cookie sprinkle side down. Add on scoop of vanilla ice cream. Add another cookie sprinkle side up. Press gently to flatten the ice cream slightly. Now, they are ready to serve!
