Gut Those Squash!

Well, our garden didn't do so great this year, but we did end up with several spaghetti squash.  Spaghetti squash is a good alternative to pasta, potatoes, or rice.  It has a light and mild taste so add some sauce and cheese to give it some flavor.  The cooked squash shreds into threads like thin spaghetti, hence the name.  The squash is usually a light yellow color and firm.  Its peak season is in the Fall.    




1. Prick squash with a fork several times and place squash in a 375F oven until the outer skin is wrinkled and the squash is very soft, about 1 hour.


2. Let cool completely.


3. Cut squash in half and carefully scoop out seeds as to not get too much of the edible parts.


4. Scrap the walls of the squash with a spoon to remove all the squash.


5. Place in a container to reheat before serving.


6.  Top with sauce and Parmesan cheese.


Cooked until very soft

Very wrinkly!


 



One of my squash had white flesh!  Never seen that before!
